Step 1
For the avocado:
Peel and cut the avocados into chunks.
Step 2
Season them with salt and pepper, add a few drops of lime juice and set aside.
Step 3
For the lime oil:
Pour the oil into a saucepan and grate the lime peel into it. Cook on low heat for 10 minutes.
Step 4
For the eggs:
Place a pot of water on the stove to boil. In the meanwhile, open the eggs, placing each one over a piece of plastic film.
Step 5
Close and twist the film around the egg until the egg package is tightly closed (repeat this process with all 4 eggs).
Step 6
Poach the eggs for 5 minutes and remove them from the water.
