100g Dark chocolate
85ml Bertolli EVOO
2 Eggs
250g Sugar
83g Flour
2g Baking powder
100g Boiled beets

Preparation

First, melt the dark chocolate and use a whisk to mix it with the Extra Virgin Olive Oil

Next, in a separate bowl, whisk together the eggs, sugar and a pinch of salt.

Combine the contents of the two bowls and then add the flour and baking powder. Mix well and grate the beets.

Spread the mixture over an oven tray lined with baking paper and bake at 180ºC for 15 minutes.
